Squashed Romanita tomatoes with basil

Serves six as a starter or four as a main meal.

Heat the oven to 200◦ C. Empty a packet of Romanita tomatoes into an ovenproof dish and sprinkle with one teaspoon of sugar, one teaspoon of coarse sea salt and some freshly ground black pepper...

Pop into the oven and bake until the skins of the tomatoes start to blister and pop. Squash roughly with a fork and drizzle with two tablespoons of olive oil. Add a small bunch of freshly torn sweet basil. Use the tomato mixture to top toasted bruschetta or freshly boiled pasta.
